Ingredients

  • Basmati Rice – 2 cups

  • Sliced Onion – 1

  • Potatoes – 2 ( Cut each in 4 pieces )

  • Carrots – 2 (Chopped)

  • Peas – 1 cup

  • Oil – 3 tablespoons

  • Cumin (Jeera) Seeds – 1/2 teaspoon

  • Turmeric – 1.5 teaspoons

  • Chile Powder – 1 teaspoon

  • Coriander – 1/2 teaspoon

  • Garam Masala – 1/2 teaspoon

  • Butter or Ghee – 1 teaspoon

  • Salt – As per your taste

Directions

  • Take a bowl and soak rice in cool water for 15-20 minutes.
  • In the meantime heat oil in pressure cooker and add Cumin seeds, Coriander and Onion in it. Stir well until onion is light brown.
  • Add potatoes and carrots in it and stir well for 5 minutes. Now add turmeric, chile powder in it and cook for 1 more minute.
  • Now drain out water from soaked rice and add these into pressure cooker and stir well.
  • Add peas, butter, garam masala and salt in it. After this add water and seal your pressure cooker.
  • Cook for 5 minutes and remove cooker from heat.
  • Release pressure naturally and then open pressure cooker and serve warm Vegetable Biryani with yogurt.

  • Potatoes – 6 large

  • Chopped green onion – 1 bunch

  • Olive oil – 1 tablespoon

  • Tomatoes – 6 large

  • Mozzarella cheese (grated) – 250 g

  • Salt – As per your taste

Directions

  • Place potatoes in a large pot and fill with water. Boil it properly until they are get soften and cooked.
  • Take another pan and add olive oil. Fry green onion in this.
  • Now add tomatoes and cook for 8-10 minutes until a sauce form comes.
  • Add grated mozzarella cheese. You can add salt as per your taste.
  • Take out the boiled potatoes and peel out.
  • Place potatoes in serving dish and pour over the cheesy tomato sauce.

Notes

  • If you like spicy dish then you can add chilli flakes.

  • Lasagna Noodles -15

  • Olive Oil – 2 tablespoons

  • Chopped fresh mushrooms – 1 cup

  • Chopped Onion – 1 cup

  • Garlic – 1 tablespoon

  • Fresh Spinach – 2 cups

  • Black pepper – 1/2 teaspoon

  • Basil Leaves (Dried) – 1 teaspoon

  • Egg – 1

  • Salt – 1 teaspoon

  • Oregano (Dried) – 1 teaspoon

  • Mozzarella Cheese – 3 cups

  • Parmesan Cheese – 1 cup

  • Ricotta Cheese – 3 cups

  • Romano Cheese – 2/3 cup

  • Pasta Sauce – 3 cups

Directions

  • Preheat the oven to 350 degrees F.
  • Take a large pot water and heat it until boil. Add lasagna noodles and cook for 8 to 10 minutes.
  • Drain excess liquid and leave it for cooling.
  • Now heat olive oil in a skillet over medium high heat. Add chopped onions, garlic and mushrooms and cook it until onion become light brown.
  • At the same time boil spinach for 5 minutes. Drain and cool the spinach. Remove excess water by squeezing and then chop it.
  • Add Romano cheese, ricotta cheese, egg, salt, pepper, oregano, basil, cooled mushroom mixture and spinach in a bowl. Mix it well with an electric mixer.
  • Lay 5 lasagna noodles in a baking dish. Add 1/3 of the ricotta-spinach mixture over noodles and spread it properly. Now sprinkle 1 cup mozzarella cheese and 1/3 cup Parmesan cheese. Spread 1 cup pasta sauce over it. Repeat this layers process two more times and then cover with aluminum foil.
  • Bake in the preheated oven for 1 hour. Then cool it for 15 minutes before serving.

Directions

  • Heat oil in a large frying pan over medium heat and fry onions until golden brown.
  • Add cumin, coriander, cayenne (Kashmiri Lal Mirch), cinnamon, salt, and turmeric. Stir constantly and cook for 1 minute over medium heat.
  • Add garlic, ginger and finely chopped tomatoes and cook for 5 minutes until it’s blended properly.
  • Now add boiled Chickpeas (White Chana) and their liquid. Continue cook and stir until all ingredients are well mixed and heated.
  • Remove the pan from heat and add freshly chopped coriander just before serving.
