Olive oil – 1 tablespoon
Skinless chicken thighs – 6
Chopped onion -1
Garlic cloves – 2
Sliced carrots – 2
Celery – 1
All purpose flour – 1/3 cup
Fresh chopped parsley – 2 tablespoons
Vegetable stock powder – 2 teaspoons
Salt – As per your taste
Chicken broth – 4 cups
Milk – 5 cups
Uncooked egg noodles – 300 g
Peas (Frozen) – 1/3 cup
Directions
- Heat up the oil in a large pan or wok over medium heat.
- Add chicken thighs in this and sear from both sides until golden brown.
- After this add chopped onion, garlic, celery, carrots and saute this for 5 minutes until celery and carrot begin to soften.
- Now add flour, vegetable stock powder, parsley and salt. Mix all these ingredients and cook for 3-4 minutes.
- Add broth and mix all together. Increase heat and bring this to a boil until it begin to thicken. Reduce heat and partially cover pan with a lid, cook this until chicken cooked properly.
- Add milk and noodles into the soup. Cook for 10 minutes until it comes to a boil and noodles begin to soft.
- Now add green peas and cook until peas are cooked properly.
- Check the consistency. If you want more thicker soup then cook for extra 2-3 minutes or add 1 tablespoon cornstarch with 2 tablespoon milk.
- Serve warm and enjoy.
